Were you too busy to meal prep yesterday? This delicious meal prep only uses one pot, and takes 20 minuets to make! It's perfect for making on a Monday night after school/work. Best part is that it's oil free, but tastes like you doordashed some Chinese take out.
For portions I do about 1 cup of rice, 1 cup of veggies, and the amount of tofu that would fit in my palm per meal. So if you want to meal prep 5 meals that would be 5 cups of rice and 5 cups of veggies. & an entire package of tofu.
Ingredients:
1 cup of brown rice
1 1/2 cup water
1 cup broccoli
1 cup carrots
1 package of tofu extra firm cut into pieces
Sauce:
2TBS of peanut butter
1TBS liquid aminos or soy sauce
Juice of 1/2 lime
1 TBS maple syrup
Directions:
Place the rice, veggies, and water in a pot and bring to a boil. Then cover and cook on low for 20 mins, like you normally cook rice. When the rice and veggies are about half way cooked carefully place a few pieces of tofu on the top to warm up, and cover again. When everything is done, first carefully remove your cooked tofu pieces from the top because they can easily break apart. Then you can scoop the rice and veggie mixture into your containers and top with your tofu pieces.
Sauce:
For the sauce simply mix all the ingredients together in a bowl. You may want to adjust the sauce ingredients to your own tastes if you want it more sweet or more salty etc. Then drizzle some of your sauce over your meals. You may want to pack extra soy sauce or lime/lemon slices if you like additional sauce.
