When I first went vegan last year I made roasted veggies every night after work. And when I say veggies I mean homemade fries... with broccoli sometimes ๐.

Roasted veggies are a great way to begin to fall in love with vegetables. Most people enjoy how roasted vegetables taste. It usually takes people longer to find raw vegetables as enjoyable. That is why I don't recommend high raw when someone first goes vegan because I want them to enjoy their food, and start out easy on the lifestyle, not super strict. It's also really easy to bake vegetables if you are new to cooking.ย Drizzle any veggie with a little avocado oil, salt and pepper-then throw them in the oven for 20 mins.
These veggie fries just add an extra ingredient of panko breadcrumbs to make the carrots more crunchy.
Ingredients
12 Carrots, Peeled and Sliced into Evenly Cut "Fries"
3 tablespoon avocado oil or other high heat oil
Dash of Ground Red Pepper
Salt and Pepper to Taste
3/4 cup Panko breadcrumbsย
Directions
Preheat over to 425. Place carrots oil, salt, and pepper in a bowl and mix until carrots are evenly coated in oil. Dip each oil covered carrot in panko bread crumbs then place on non stick baking pan. Arrange neatly on a non stick pan, careful none are touching. Bake for about 20mins, flippingย after 7mins. Once they look brown remove them from the oven.ย
Serve these with organic ketchup and mustard.ย
