I'm so happy with how these collard wraps came out! They are non vegan approved, my boyfriend loved them. This is for sure going to become a regular meal I make from now on.
Ingredients:
1 bag of frozen riced cauliflower. At walmart they sell frozen riced cauliflower with veggies already mixed in it.
1 bag of frozen veggies like peas carrots edamame
1 bunch of collard greens
Mango pico de gallo OR 1 mango, 1/2 onion, and cilantro
guacamole OR 1 avocado mashed with 1 lime juice
1TBS of cooking oil
liquid aminos or soy sauce for flavor
Directions:
1.First make your cauliflower fried rice. Throw your frozen veggies in a skillet with oil. When it is heated it's done. Add some liquid aminos/soy sauce and lime juice for flavor.
2.Prepare your collard greens by removing the stem from the ends, and carefully trimming the stem to be less thick on the leaf.
3.If you need to prepare your mango pico de gallo, or guacamole do it now.
4. Add all the ingredients to the underside of the collard leaf in the middle. First fold in the right and left sides, then fold in the top side and bottom side. Flip the wrap so the folded side is face down on the counter keeping the wrap intact. It sounds complicated, but it really isn't. Just wrap it like a burrito. 🌯
