Most raw vegan taco recipes involve some sort of walnut meat or cashew cheese sauce-- both taste delicious, but they aren't exactly easy to make.
Since this recipe doesn't have any raw vegan specialty ingredients (only veggies) it is very cheap to make on a student budget.
This only takes 5 mins to make, and it's a fun way to eat more salad. Since this is a lighter recipe; I recommend serving it with additional avocado on the side more more calories. 🥑
I know this recipe might seem a little too healthy for some people out there. But please just give it a try! I didn't use ANYTHING bitter in this recipe. No arugula, no kale. All veggies I chose are sweet, and mild so it would even be a good recipe for kids that are picky.
Ingredients: 3 roma tomatoes 1 avocado 1/4 cup red onion 2 carrots 5 lettuce leaves (iceberg or romaine) 1 cup spinach 1/2 cup corn 1 lime pink Himalayan salt crushed black pepper cumin powder (optional) cayenne powder (optional) Directions: Slice the tomatoes, avocado, and red onion. Shred the carrots. Lay your lettuce leaves out flat on a large plate or tray. Top them with the spinach, sliced tomatoes, shredded carrots, corn, sliced red onion, and sliced avocado. Juice the lime over the topped lettuce leaves. Sprinkle with salt, pepper, (or use your favorite seasonings!).
