Fall Harvest Bowl with Peanut Sauce🍂🍚

I threw this recipe together Sunday night and wow it was amazing. It's very easy to make, but made me feel like I had just ordered an overpriced fancy grain bowl from a hipster vegan restaurant. 


Bowl Ingredients:

1 cup brown rice

 1 bunch of Broccolini or broccoli

3 carrots

1 bunch of asparagus

1 bag walnuts

1 bag cranberries 


Lazy Peanut Sauce ingredients 

1/4-1/2 cup of Trader Joe's spicy peanut salad dressing 

1-2TBS of peanut butter


Not Lazy Peanut Sauce ingredients

Here is my original peanut sauce recipe if you are feeling motivated =)

2 tablespoons liquid aminos or nama shoyu (can sub soy sauce) 4 tablespoons peanut butter 1/4 cup of water, add more if you want less thick 2-4 tablespoons maple syrup


Directions:


  1. First start cooking your brown rice in a small pot. Takes about 20-30mins.

  2. Chop up your carrots, broccoli, and asparagus. Place all chopped veggies in a bowl drizzle with 2 tablespoons of avocado oil, salt and pepper. Place all veggies on a non stick baking pan to bake at 420 for 20-30mins until everything looks nicely roasted. 

  3. For your peanut sauce you just mix all the ingredients in a bowl with a fork.

  4. For the lazy sauce I just add peanut butter to the trader joes spicy peanut salad dressing to thicken it, and make it taste less artificial. 

  5. Now time to assemble your bowl. Put your rice in first as a base, then assemble your veggies on top by color. Then add your cranberries and walnuts and drizzle with your peanut sauce.
