I always knew beets were healthy, but I recently heard Dr. Mona Vand (on one of her youtube videos) refer to beets as being one of the top anti cancer foods, and she eats them weekly!
Beets are not something I weekly buy. So my goal is to change this for my health, and make them become a staple food for me like potatoes and broccoli are.
Beets taste delicious roasted as fries dipped in ketchup and mustard.
1.First remove the skin from the beet. This will make it very messy, and easy to stain your clothing and counter top so be careful.
2.After you have finished slicing your beet into fries place them in a bowl.
3.Add in 1-2 TBS of avocado oil. I try to do 1TBS per beet so it doesn't become too oily.
4.Salt and pepper.
5.Bake at 420 for 20-30 mins.
6. I also added panko bread crumbs to mine. It didn't workout, as you can see in the photo below. Don't do it. They turn pink and don't really stick to the beets same as they do carrots and other veggie fries.
