This is the perfect lazy healthy meal for summer. I love how filling avocados are!
Avocados are one of my go to raw foods if I am feeling that STARVING/HANGRY feeling😡. Avocados are also useful if you are following a keto diet, or playing around with intermediate fasting. Avocados won't kick you out of ketosis because of their low carb, and high fat content.
The other cool thing about this recipe is that it is one of those rare gems that is keto, vegan, raw, gluten free, dairy free etc. so most special needs diet people will like it.
Simply cut the avocado in half, remove the pit, and scoop out a small amount avocado so you can fit more filling. I stuffed mine with a tomato and mango pico de gallo, and topped it with a pepper jack flavored raw cashew cheese.
I was so excited I found this raw cashew cheese at wholefoods! It is easy to find vegan nut based cheeses now BUT it is not easy to fine RAW vegan nut based cheeses. I try to follow a high raw vegan diet so I assumed I would always have to make my own raw cheese at home. But yay not anymore! Anyways this cheese doesn't advertise itself as raw, but if you look at the ingredients the first one is raw cashews so that counts as pretty raw to me. It's called The Cultured Kitchen, Cashew Reserve, the pepper jack flavor.
