Quinoa Pilaf with coconut, raisins, & pumpkin seeds

This is the best quinoa recipe ever. It will impress people. It's healthy. You're welcome.


2 tbs coconut oil 1/2 white onion finely chopped 1/2 a bunch of green onions finely chopped  1/4 cup finely chopped cilantro

1/4 cup finely chopped parsley 1/4 cup finely chopped mint 1/4 cup unsweetened shredded coconut 1/4 cup pumpkin seeds 1/4 cup raisins 2 cups cooked quinoa 2 tbs Bragg Liquid Amino Seasoning

Juice of 1/2 lime

First cook your quinoa. One cup dry quinoa yields about three cups cooked quinoa. So if you make one cup of dry quinoa you will have the 2 cups needed for this recipe, plus an additional cup you can use for another recipe or you can add more quinoa to this recipe, just make sure to increase your portions of the other ingredients.


Heat coconut oil in a large frying pan over medium-high heat. Add onions,cilantro, parsley and mint. Cook, stirring continuously, for 2-3 minutes or until herbs start to become tender. Add shredded coconut, pumpkin seeds and raisins and continue to cook, stirring, for 2 minutes.

Add quinoa, Bragg Liquid Amino Seasoning, and lime juice. Reduce heat to medium and cook, stirring often, until quinoa is heated through. You may need to add a little more coconut oil while you are cooking so pilaf does not stick or burn. Garnish with additional shredded coconut and cilantro.
