Raw Vegan Cauliflower Ceviche Salad 🥦🌮

This is a delicious way to enjoy cauliflower raw, no cooking required, with lots of amazing fresh mexican flavors. You can enjoy this so many ways too! Here I served it on tostado shells with avocado. But you can also serve it over lettuce with refried beans, or eat it with tortilla chips as a sort of cauliflower salsa. 


GREAT FOR MEAL PREPPING, AND CHEAPER THAN GREEN SALADS.


This salad also keeps really well in the fridge, it doesn't get soggy. It lasts about 4-5 days so you can add it to meals all week as a healthy side salad or use as a salsa on top of things. So much cheaper than green salad too!  I really hope you love it as much as I do ❤️.


Ingredients:

2 medium tomatoes

1/2 red onion

1 mango or 1/2 pineapple if you can't find mango in season.

1 bunch of cilantro

Juice of 2 limes

1 head of cauliflower

1/2 jalapeno raw or pickled (optional)

corn tortillas, for serving 

avocado, for serving


Just use this as a base then add any other veggies you enjoy. Corn, radish, bell pepper, and carrots would all work well. 


Directions

Dice all the veggies into small pieces. Cut the cauliflower in small pieces, but don't go to the point of making it cauliflower rice because that will make the salad too soggy.Add all the diced veggies in a bowl, and add your lime juice, salt, and other seasonings you enjoy. Cumin or chipotle powder would both work well.Warm your corn tortillas on the pan until they become hard tostada shells.Serve your cauliflower ceviche on a tostado with avocado on top.
