Being healthy while being busy can be difficult. Even when you meal prep properly, many meal prep salad recipes can be difficult to eat while you are on the go, or in the middle of working. A lot of people turn to products like store bought wraps, or bars because they are easy to eat, transport, and multitask with---which is the world we live in, a proper sit down meal is rare during the work week sometimes. But I dislike many of the additives in store bought wraps and bars.
This wrap is made with a collard leaf, and a raw vegan cashew cheese. It tastes similar to the traditional flour tortilla cream cheese wrap I loved as a child, but is a lot healthier.
Ingredients:
Collard Leafs
Bell pepper slices
shredded carrots
avocado slices
The cultured kitchen cashew cheese, or any other vegan cream cheese you like. I recommend a nut based one.
Directions:
Wash and dry collard leaves and then use a knife to shave down the stems. This will make them much easier to fold.
Place collard leaves on a flat surface, spread the vegan cheese and veggies near the top/middle of each leaf. Be careful to not overfill them, start with small amount of veggies so it is easier to roll . Wrap the leaves as you would a burrito, tucking in the ends as you roll. Cut each wrap in half and enjoy.
