Raw Vegan Stir Fry Recipe & Loading up on frozen produce to reach weight loss goals👙

This recipe surprised me because it really tasted like it was cooked, but was entirely raw. Great option for the summer if you are craving stir fry but don't want to cook. Don't order greasy stir fry from doordash, just make this instead!


I served this with some frozen cauliflower rice I quickly cooked up, topped with a little sriracha.


Ingredients:

1 Tbsp raw sesame oil

2 Tbsp coconut aminos

2 Tbsp liquid aminos

3 1/2 tbsp raw almond butter

1.5 tsp fresh grated ginger

1 clove of garlic grated

fresh lemon juice

salt (to taste)

1/2 cup shredded carrots

1 bell pepper cut into thin strips

1 Cup finely chopped broccoli

Garnish with cilantro and basil


Directions:

Simply combined everything into a bowl and let it marinate for at least 30 minutes. But the longer it marinates for, the better the flavors become.


**It occurred to me later that vinegar would have probably been a nice addition to this recipe. So if you have some rice vinegar, or apple cider vinegar, feel free to add a tablespoon or two for additional flavor.

If you have a weight loss goal, I highly recommend that frozen cauliflower rice and frozen fruits always be in your freezer this summer 🏄👙 . They both have saved me so many times lately when I'm hungry, and close to binge eating something unhealthy. Frozen produce tends to be cheaper (even when it is organic), and it also lasts longer, making it a practical purchase for your budget as well. Fresh organic berries are so rich in antioxidants BUT they are SOO expensive, and they can mold like instantly! Buying them frozen is a great way to make them more affordable.


🍚 Frozen cauliflower rice is helpful when you are craving something savory like rice, bread, or potatoes and you want it NOW. You can cook frozen cauliflower rice up in about 5 minutes on the frying pan. This is fast enough for most hangry people when they get home from work. You can find frozen cauliflower rice packs now that have peas, carrots, and other veggies already added to them, making healthy living even easier! Hit up Trader Joe's!

🍍🍌🍓 Frozen pineapple, frozen blueberries, and frozen banana all actually taste better to me frozen, rather than fresh. They almost taste like sorbet ice cream, so it helps to satisfy my ice cream cravings. Frozen fruit also encourages you to eat fruit more slowly, (as long as you DON'T blend it in the blender!) which can help keep your fruit portions smaller. I don't typically worry about consuming too much fruit because I consider it a healthy hydrating snack (consuming fruit antioxidants daily help my skin look a lot brighter), BUT it still has sugar so I know I shouldn't go wild on it.
