SWEET POTATO WEEK, Sweet Potato Fall Breakfast Bowl🍁

Sweet potato for breakfast? YES! It's a filling delicious breakfast, and such a nice change from oatmeal. Not to hate on oatmeal but I do think it's overrated as a "health" food. Sure it's vegan and has fiber & protein, but it isn't a fruit or vegetable. And it's been heavily processed so there really isn't much nutrients in it.  I prefer a bright colorful breakfast because I know color = nutrients. And it doesn't get much brighter orange than a beautiful sweet potato. 😃


Ingredients

1 large sweet potato

1-2 TBS raw almond butter

handful of walnuts

1/2 apple sliced

dried cranberries or raisins

1 TBS maple syrup

cinnamon to taste 


Directions

First boil your sweet potato in a small pot of water until it is soft enough to mash, takes about 20 mins. Sometimes cutting it in half can speed up the boiling. Don't remove the skin because the skin has a lot of nutrients in it.

Place your soft boiled sweet potato in a bowl while it's still warm from boiling and mash it down with a fork like you are making mashed potato. Then add cinnamon and maple syrup and mix well. Now you are ready to top your bowl with apple, walnuts, dried fruit, almond butter, and any other toppings you would enjoy.
