Now the thing to know about vegan mac n cheese is that it won't ever taste like the dairy version unless you add a lot of processed ingredients to it. I really wanted this recipe to not use any vegan cheeses or processed ingredients. So when you try it, don't compare it to anything, try to objectively give it a chance as its own thing. 😃 I found it very satisfying the other night for dinner.
1 package of whole wheat pasta
1 sweet potato
1 can of coconut milk
1/2 cup of nutritional yeast
1 clove of garlic
lots of salt and pepper
a pinch of turmeric for color (optional)
1.First dice up your sweet potato into cubes and roast at 420 with 2 TBS of oil, salt and pepper for 20-30 mins.
2.boil your pasta by the package instructions
3.In another small pot add diced garlic with 1 TBS of oil and let it cook. Once garlic is cooked add coconut milk and nutritional yeast. Mix well and bring to a soft boil. Turn to low, and taste the sauce. Add salt and pepper until the sauce tastes the way you like.
4. Pour the sauce all over the cooked pasta, mix well. Add your cooked sweet potatoes on top and it is ready to eat!
