I love this recipe because it turns a junk food favorite into something healthy. This recipe uses mashed beans instead of vegan cheese which I thought was really cool because too much vegan processed foods can make you feel kinda shitty. And the beans add fiber and protein with no saturated fat. I really like to see vegan recipes that get creative by using plant ingredients instead of just buying the already made processed vegan ingredients. This also tastes really really good. I can't wait to have it for dinner again tonight.
Ingredients:
Flour Tortillas, whole wheat or regular
1 Can of Navy Beans. Make sure to get the whole beans in the can, not refried.
Already made tomato salsa you enjoy or chop fresh tomato, onion, and cilantro to make your own salsa.
1/2 onion sliced into long strips
1 bell pepper sliced into strips
1 small package of mushrooms
1 avocado
2 tablespoons of cooking oil
**Optional Lettuce or cilantro for garnish
Seasonings:
onion powder
Salt and pepper
1.First wash and chop your veggies: onion, bell pepper, and mushrooms. Start cooking these first in a skillet with 1 tablespoon of oil, should only take a few mins. Once cooked place on a plate covered to stay warm. Wash skillet to use for the quesadilla in step 3.
2. Drain your can of beans and rinse them very well to get the canned flavor off them. Put them in a bowl and mash them with a fork. Add seasonings of onion powder, salt, pepper. Spread your bean mash onto one flour tortilla. Place a second tortilla on top. Gentle press them together.
3. Heat 1 tablespoon of oil on your skillet, and begin cooking your bean quesadilla. Brown each side.
4. Plate your dish. First cut your round quesadilla like a pizza into slices. Top with your fajita mixture. Then cut your avocado and add fresh avocado, and salsa on top and other toppings you have like cilantro or lettuce.
