The only part of this recipe you need to cook is the mashed potatoes which takes about 15 min to boil.
The star ingredients of this meal prep are potatoes, kidney beans, bell pepper & onion--everything else could be eliminated or substituted to save money.
This meal has a good balance of plant based carbs, protein, and fat to keep you satisfied.
**If you need more calories, pairing this with a few corn tortillas to make little potato kidney bean tacos is a great option. We ate it for dinner this way the other night.
Shopping List
Potatoes. 1 large potato is enough carb for two meals so calculate how many potatoes you need to buy based off how many meals you plan to prep.
1 can of coconut milk. This should be enough for even a large batch of mashed potatoes. I use 1/4 cup of coconut milk per one potato ratio, but you can adjust this to your own liking.
Canned Kidney Beans. 1 can is enough beans for two meals so buy enough cans for how many meals you plan to prep.
Bell Peppers. 1 bell pepper per meal so buy based on how many meals you plan to prep
2-3 limes or lime juice already bottled
1 Red onion
Canned Pickled Jalapenos
Cilantro and Avocado to garnish-optional I know these are pricey & they aren't necessary for the recipe. But if you can afford they add more flavor and nutrients.
Mexican Mashed Potato Recipe
First boil your potatoes for about 15 mins until you can stick a fork through them. The ratio of this recipe is 1 large potato to 1/4 cup of coconut milk, double ingredients as needed to meal prep. Salt and pepper to taste. Then dice up a few pickled jalapenos and cilantro to add to give it a Mexican flavor, and half a lime juice.
Raw Fajita Salad Recipe
Slice red onion and bell pepper into long thin strips. Add lime juice, salt, cayenne pepper, and cumin to season. About 1 cup of onion and bell pepper per meal container.
Kidney beans and trail mix.
Add half a can of kidney beans to meal container. Add 1/4 cup of trail mix to meal container.
