This recipe will help you lose weight and not waste your time or money. Plus it tastes very savory so I know everyone will enjoy it.
I want to always be clear when I mention weight loss, I mean in the healthiest way possible; by eating MORE vegetables. It's all about learning to prepare vegetables so they taste good for you to enjoy them. And letting the healthy food slim you down naturally so you don't ever have to "diet" and restrict yourself. The more vegetables and fruits you eat, means you will automatically be eating less of other foods. So you don't even need to think about what NOT to eat. Just focus on adding in more produce to your meals, and how to make the produce taste good to you. <3
Ingredients 1 bag frozen Cauliflower rice 2 Tbs Chipotle powder 2 tsp Ground Cumin 1 tsp Smoked Paprika 1/4 tsp Ground Pepper 1/4 tsp Salt 1 onion diced
1 roma tomato diced
some cilantro to serve
Head of romaine lettuce
1 cup of frozen corn
1/2 can of kidney beans
2 TBS of avocado oil for cooking
Directions
In a large skillet saute half of the diced onion in the avocado oil at medium high heat. Begin adding some of your spices, 1 tablespoon of each.
Then add the frozen cauliflower rice, then add the rest of the spices. Let it cook for about 10 minuets until water has disappeared from the skillet. Taste it. Add more salt and cumin if the flavor isn't strong enough for your taste. I like mine more salty and flavorful.
Last add the corn and beans to the cauliflower rice. Let them cook for about 3 mins until they are heated. Add more salt and spices if needed.
Mix your diced tomato and left over raw onion in a bowl with cilantro to make your own pico de gallo.
Serve the cauliflower meat mixture on your lettuce leafs. Top with your homemade pico de gallo
